This juicy burger has us thinking of grilling and picnic with family and friends.

Ingredients:

For 1 burger...

0.25lb burger patty - we used a ground beef patty from @riverwardsproduce for this recipe but you could easily form your own meatballs/patties using any ground meat or plant-based ground meat substitute

2 slices American cheese

1.5 tsp of your favorite Aaji's Tomato Lonsa + more for spreading on your bun!

A burger bun

Pickles and onions - we used @fishtownpickles Sweet Onion Pickles, both the pickle chips and onions for this recipe

Process:

Cut the burger patty in half and reform each half into two meatballs

Cover the two meatballs with wax paper and use the back of a pan to press down evenly. You should end up with two patties similar in size and thickness.

On one patty - layer one slice of cheese, AAJI’S Tomato Lonsa and another slice of cheese. Make sure the cheese and Lonsa are in the center of the patty and there is a perimeter of ground meat around the cheese and Lonsa.

Place the second patty on top of the first and press down on the edges to seal both patties together.

Cook the stuffed patty in a greased cast iron skillet - about 4-5min on each side.

Plate your Juicy Lonsa Lucy burger on a bun smothered with Lonsa and topped with pickles and onions.
