The potatoes in this dish serve as a blank canvas for the sweet, spicy, tart and savory flavors of our Tomato Lonsa.

Ingredients:

2 lb white potatoes, peeled and thinly sliced

4 Tbsp butter, melted plus some more to butter skillet

1/4 Tsp salt

8 Tbsp parmesan cheese, grated

8 Tbsp your favorite Aaji’s Tomato Lonsa (we like Spicy in this recipe!)

Process:

Heat oven to 425 degrees.

While oven is heating, cover sliced potatoes in cold water for 10min. Drain and then pat dry.

Butter bottom and sides of a nonstick 10” ovenproof skillet.

Starting in the center of the skillet, use 1/4 of the potato slices to make an overlapping circular pattern that covers the bottom of the skillet.

Brush potatoes with 1/4 melted butter, a pinch of salt and 2 Tbsp parmesan cheese.

Repeat steps 4 and 5 three more times to get a total of four layers of potatoes.

Place skillet on stove and cook uncovered for 5min on medium-high heat.

Cover with foil (sprayed with cooking spray) and bake for 15min.

Remove foil and bake for additional 20-25 more min until potatoes are tender and golden.

Remove from oven, run spatula around edge of potatoes and gently shake skillet. Place heatproof plate on top of skillet and slowly turn skillet/ plate over.

Spread 8 Tbsp Aaji’s Tomato Lonsa on top of potatoes and broil in oven for 2min.

Remove from oven, cut into wedges and Enjoy!
