Lonsa Deviled Eggs
Lonsa Deviled Eggs
Deeply savory and devilishly addicting
Ingredients:
6 large eggs
2 tablespoons mayonnaise
2 tablespoons Aaji's Tomato Lonsa
1/2 teaspoon strong English mustard
Salt and black pepper
Thinly sliced chives, or scallions, for topping
Process:
Carefully add eggs to a large pot and fill with water to completely submerge them. Cover and bring to a boil, then turn the heat off. Allow to sit, covered, for 10 minutes.
Transfer eggs to an ice bath, and allow to cool for 10 minutes.
Peel the shells off the eggs, then slice eggs in half.
Scoop out the yolks and transfer to a small bowl along with mayonnaise, lonsa, mustard, and salt and pepper to taste. Mix until smooth and creamy.
Spoon or pipe the filling back into the yolks, and top with chives. Enjoy!
