Lonsa Eggs inspired
A heartwarming dish of eggs with AAJI’S Tomato Lonsa inspired by Shakshuka.
2 Tablespoon Olive Oil
1/2 Onion, chopped
1 Container AAJI’S TOMATO LONSA
Salt and pepper to taste
Heat the olive oil over medium heat in a lidded pan.
Add the onion and saute until the onion is translucent and soft, 3-5 minutes.
Reduce heat to low. Add AAJI'S Tomato Lonsa and 1/4 cup water. Stir to mix.
Using the back of a spoon, make 4 small wells in the Lonsa - one for each egg.
Crack eggs into wells.
Cover the pan with a lid and cook eggs for 4-8 minutes until eggs are cooked to your liking.
Remove the pan from heat. Season eggs with salt and pepper and garnish with chopped cilantro.
Serve with crusty bread and enjoy!
